Ingredients:
1 1/3 lb boneless and skinless chicken breast
18 2/3 oz canned diced tomatoes, half of liquid drained
2/3 sweet onion, sliced thin
2 2/3 garlic cloves, minced
2 tbsp balsamic vinegar (plus more for serving)
2 tsp Italian seasoning
4 cups fresh spinach
Salt and pepper
Preparation:
Add all ingredients to the slow cooker, except spinach. Cook on low for 4-6 hours. Add the spinach the last 30 minutes of cooking.
