Ingredients:
1.5 cups oats
1.5 cups water (boiling)
1 cup flour
1/2 cup whole wheat flour
3/4 cup brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/4 cup honey
1/4 cup applesauce
1 egg
3 tbsp butter, melted
1 tsp vanilla
1.5 cups apple (peeled, chopped or shredded)
Preparation:
Preheat oven to 350. Line muffin cups with liners. Pour boiling water over oats and led stand for 20 minutes.
Combine dry ingredients. Whisk together wet ingredients. Add oats to wet. Add wet to dry and stir enough to coat.
Bake 15-20 minutes.
